In such a place, the air is not merely part of the environment but an invisible factor that directly influences work, comfort, and performance. If the air is bad, everything slows down: the floor becomes slippery from the moisture, concentration becomes difficult due to the heat, and odors flood the spaces. However, if the air is fresh, the difference is immediately noticeable. Breathing is easier, the mind is clearer, and the mood is better. This is exactly the difference that VENTS Hungary, wanted to achieve when they were called by their partner to an industrial kitchen in the capital where more than ten thousand portions of food are prepared daily. At this scale, ventilation is no longer a simple technical issue but a strategic challenge. A solution was needed that not only removes heat and moisture but also cleans, recovers, and regulates the air — all in an energy-efficient and continuous operation.

A space where the air also works overtime

The grease particles floating in the air eventually settle on the walls, machines, and vents, forming a flammable layer. An improperly maintained industrial ventilation system can become one of the biggest fire hazards in the kitchen.

Ventilating industrial kitchens is always an extreme task. These spaces practically never stop: the heat load is constant, moisture is always present, and the air is dense with grease particles and odors. Airflow here is not just a matter of comfort but also a safety and hygiene factor. If the air does not exchange quickly enough, moisture condenses, greasy vapor settles on the walls and equipment, which over time can become not only unpleasant but also dangerous. Due to poor ventilation, the grease particles floating in the air can form a flammable layer in the ventilation ducts, increasing the fire hazard. The VENTS Hungary team knew exactly that in this environment, it is not enough to simply „extract” the air — it must also be treated, cooled, cleaned, and recovered. For this, equipment was needed that operates stably under high load and can maintain air quality over the long term without exhausting the system.

The choice fell on the BlauAIR BLL27 type heat recovery ventilator. This equipment is specifically designed for industrial environments: With a delivery capacity of 22,000 m³/h it can ensure continuous air exchange in the space. The machine was placed on the roof of the building, which is not only practical but also an ideal solution from a noise perspective, as it does not disturb the kitchen work with the operation of the fans. Moreover, the rooftop unit is easily accessible during maintenance, ensuring the continuity of operation — in a place where production never stops, this is crucial. The equipment operates with a so-called „fan wall” system, which means that it does not work with a single large fan but with several smaller units operating in parallel. This arrangement guarantees uniform airflow, energy-efficient operation, and perhaps most importantly: the system remains operational even if one fan fails. In an industrial environment, reliability is more valuable than anything else — there is no room for unexpected shutdowns.

When the air not only refreshes but also renews

Modern systems can detect the air's CO₂ level, humidity, and load, and then automatically optimize the air exchange — achieving even 20–30% energy savings is achieved at the end of the day.

A BlauAIR BLL27 one of its biggest advantages is that ventilation means not only replacement but also regeneration. The device heat recovery unit is capable of returning the energy of the outgoing warm air and transferring it to the incoming fresh air. As a result, the system does not waste heating or cooling energy but recycles it. In winter, the kitchen does not cool down because the outgoing warm air preheats the incoming air. In summer, the opposite happens: the outgoing cool air cools the hot air from outside. The technology is capable of increasing comfort and reducing energy consumption, making it not only a more economical but also a more environmentally friendly solution. Such a system can achieve up to 70-80 percent energy savings compared to traditional ventilation, which is a huge difference on an industrial scale.

However, ventilation is not just about temperature. In industrial kitchens, one of the biggest problems is the presence of airborne grease particles, which slowly form a coating on every surface. Therefore, BlauAIR works with a separate grease trap section that filters even the finest oil particles before they reach the ducts or fans. This not only improves cleanliness and hygiene safety but also increases the lifespan of the equipment. In addition, the system is equipped with a 50 kW direct cooling module that cools the supplied air, ensuring that the kitchen temperature remains stable and bearable, even in the hottest summer heat. The combination of cooling and heat recovery creates an indoor climate where not only the air quality but also the well-being of the workers improves.

Smart control that senses the air

Modern ventilation systems today are not only powerful but also intelligent. The BlauAIR BLL27 operates with built-in CO₂ sensors modern technologies and automated control, which means that the device continuously monitors air quality and adjusts its operation accordingly. If the carbon dioxide level rises due to many people working in the kitchen or more intense cooking, the system automatically increases the air exchange. If the load decreases, it reduces the performance. The process is completely self-operating, requiring no manual intervention, and the system always maintains the optimal balance between air quality and energy consumption. This intelligent control is the new standard in industrial ventilation, ensuring both a stable environment and energy-conscious operation.

The BlauAIR BLL27 has proven that even the highest load is not an obstacle if the system is built on the right principles: reliability, efficiency, and intelligence.
